mongolian buuz

Mongolian Buuz are traditional steamed dumplings that are a staple of Mongolian cuisine. These dumplings are filled with a savory mixture of ground meat (typically beef or lamb), onions, garlic, and spices, then wrapped in a thin dough and steamed to perfection. Buuz are often enjoyed during special occasions and festivals, such as the Mongolian Lunar New Year (Tsagaan Sar). They are juicy, flavorful, and best served hot, often accompanied by a dipping sauce or a side of pickles.

Ingredients

For the Dough:

  • All-Purpose Flour: 2 cups
  • Water: 3/4 cup (for dough)
  • Salt: 1/2 teaspoon

For the Filling:

  • Ground Beef or Lamb: 300g
  • Onion (finely chopped): 1 medium
  • Garlic Cloves (minced): 3 cloves
  • Fresh Ginger (minced): 1 tablespoon
  • Soy Sauce: 1 tablespoon
  • Salt: 1 teaspoon (or to taste)
  • Black Pepper: 1/2 teaspoon
  • Cumin Powder: 1/2 teaspoon
  • Sesame Oil: 1 tablespoon
  • Water or Broth: 2 tablespoons (for juiciness)

For Serving:

  • Soy Sauce: For dipping
  • Vinegar: For dipping
  • Chili Oil or Chili Flakes: Optional, for added spice

Instructions

Prepare the Dough:

  1. Make the Dough:
In a mixing bowl, combine the all-purpose flour, salt, and water to form a smooth dough. Knead for 5-7 minutes, then cover with a damp cloth and let it rest for 20 minutes.
  1. Prepare the Filling:
  1. Mix the Filling:
In a bowl, combine the ground beef or lamb, chopped onion, minced garlic, minced ginger, soy sauce, salt, black pepper, cumin powder, sesame oil, and water or broth. Mix well until the filling is evenly combined and slightly sticky.
  1. Shape the Buuz:
  1. Roll Out the Dough:
Divide the dough into small balls (about 1 inch in diameter). Roll out each ball into a thin circle (about 3 inches in diameter).
  2. Fill and Fold:
Place a spoonful of the filling in the center of each dough circle. Fold and pleat the edges to seal the dumplings, leaving a small opening at the top to allow steam to escape.
  1. Steam the Buuz:
  1. Prepare the Steamer:
Line a steamer basket with parchment paper or cabbage leaves to prevent sticking. Arrange the buuz in the steamer, leaving space between them to expand.
  2. Steam:
Steam the buuz over boiling water for 15-20 minutes, or until the dough is cooked through and the filling is juicy.
  1. Serve:
  1. Prepare the Dipping Sauce:
Mix soy sauce, vinegar, and chili oil or chili flakes (if using) in a small bowl.
  2. Serve Hot:
Serve the buuz hot with the dipping sauce on the side. Enjoy the juicy, flavorful dumplings as a main dish or appetizer.
